Iris pallida (orris dalmatica) và Iris germanica là hai loài chính cho orris commercial. Iris pallida cho irone ngọt và tinh khôi hơn; Iris germanica có irone bộ khác.
Rễ ngầm thu hoạch, gọt sạch, rồi PHỞI Ủ 3-5 năm. Trong quá trình ủ, các tiền chất iridal trong rễ chuyển hóa thành irone, hợp chất tạo mùi đặc trưng. Chưng cất rễ tươi không cho ra orris có mùi.
Sản xuất chính Italy (Tuscany), Maroc. Vùng Florence (Firenze) được coi là chuẩn vàng cho orris, Iris pallida 'Florentina' là cultivar chuẩn.
Tên 'Florentina' đôi khi dùng để chỉ Iris florentina (loài khác), nhầm lẫn taxonomy.

Iris pallida (orris dalmatica) and Iris germanica are the two main commercial sources of orris. Iris pallida yields sweeter, more crystalline irones; Iris germanica has a different irone profile.
Rhizomes are harvested, cleaned, then AGED 3-5 years. During aging, iridal precursors in the root convert to irones, the compounds giving orris its characteristic aroma. Distilling fresh roots does not yield aromatic orris.
Main production: Italy (Tuscany), Morocco. The Florence (Firenze) region is regarded as the gold standard for orris, Iris pallida 'Florentina' is the benchmark cultivar.
The name 'Florentina' is sometimes used for Iris florentina (a different species), a taxonomic confusion.
