Concrete

Concrete là bước đầu tiên khi hoa tươi được chiết bằng dung môi bay hơi. Dung môi kéo ra khỏi cánh hoa cả phân tử thơm lẫn sáp, sắc tố và các chất béo khác. Khi dung môi được cất đi, phần còn lại là một khối đặc, thường màu cam, nâu hoặc vàng, dẻo như sáp ong ở nhiệt độ phòng.

Phần lớn concrete không được dùng nguyên dạng. Nó là nguyên liệu trung gian để làm absolute. Một số concrete vẫn được bán riêng, chủ yếu cho xà phòng, sáp thơm và các sản phẩm cần độ bám. A concrete is the first product obtained when fresh flowers are extracted with a volatile solvent. The solvent draws out aroma molecules together with waxes, pigments and other lipids. Once the solvent is distilled off, what remains is a firm mass, often orange, brown or yellow, with a texture close to beeswax at room temperature.

Most concretes are not used as they are. They are an intermediate for making absolutes. Some are still sold in their own right, mainly for soap, scented waxes and products where tenacity matters. This page covers how a concrete is made, what it contains, yields with sources, and one naming trap: orris butter.

ISO 9235:2021 describes a concrete as an extract taken from a fresh natural raw material with one or more solvents, after which the solvent is removed wholly or in part.

01Concrete được làm thế nào/How a concrete is made

Hoa được xếp thành từng lớp trên khay trong bình chiết, rồi ngâm hoặc tưới dung môi nhiều lượt. Dung môi hòa tan phân tử thơm và các chất tan trong dầu có trên bề mặt cánh hoa. Dịch chiết được chuyển sang nồi cô, dung môi được cất và thu hồi để dùng lại. Phần dung môi cuối cùng được kéo ra dưới chân không để nhiệt độ không phải lên cao.

Hoa phải vào xưởng sớm sau khi hái vì nhiều loài hoa trắng tiếp tục đổi mùi sau khi rời cây. Ở Grasse, hoa được đưa vào xưởng trong vòng vài giờ. Nhà máy chiết bằng dung môi bay hơi đầu tiên ở Grasse được hãng Chiris xây năm 1898 và khánh thành năm 1899. Hồ sơ di tích của Bộ Văn hóa Pháp ghi các dung môi dùng tại đây khi đó gồm ether dầu hỏa, benzene, cồn và aceton.

Flowers are spread in layers on trays inside an extractor and washed with solvent several times. The solvent dissolves aroma molecules and the oil-soluble matter on the petal surface. The extract passes to an evaporator, where the solvent is distilled off and recovered for reuse. The last traces are removed under vacuum so the temperature stays low.

Flowers must reach the factory soon after picking, since many white flowers keep changing their scent once cut. In Grasse they arrive within a few hours. The first volatile solvent extraction plant in Grasse was built by the Chiris firm in 1898 and opened in 1899. The French Ministry of Culture heritage record lists the solvents handled there as petroleum ether, benzene, alcohols and acetones.

Today hexane is the usual solvent for fresh flowers. Benzene is no longer used: IFRA has prohibited it as a fragrance ingredient since 1988 and caps any residue at 1 ppm in the fragrance mixture.

02Trong concrete có gì/What a concrete contains

Concrete gồm hai phần. Phần thơm là các phân tử bay hơi và bán bay hơi, ví dụ benzyl acetate, linalool và indole ở nhài. Phần không thơm là sáp thực vật, hydrocarbon mạch dài, acid béo và sắc tố.

Vì giữ cả sáp, concrete không tan hoàn toàn trong cồn và gần như không dùng được trong nước hoa cồn. Nó tan tốt hơn trong dầu và chất béo, nên hợp với xà phòng, sáp và sản phẩm dạng rắn. Mùi của concrete thường tròn và chậm hơn absolute cùng loại hoa.

A concrete has two parts. The aromatic part is volatile and semi-volatile molecules, for example benzyl acetate, linalool and indole in jasmine. The non-aromatic part is plant wax, long-chain hydrocarbons, fatty acids and pigments.

Because it keeps its waxes, a concrete does not fully dissolve in ethanol and is of little use in alcoholic perfume. It dissolves better in oils and fats, which suits soap, waxes and solid products. Its scent is usually rounder and slower than the absolute of the same flower.

03Hiệu suất: bao nhiêu hoa cho một ký concrete/Yield: how many flowers make a kilogram

Hiệu suất concrete thấp và dao động theo giống, mùa và giờ hái. Một nghiên cứu công bố năm 2012 thu được 0.35 phần trăm concrete từ hoa nhài grandiflorum tươi chiết bằng n-pentane. Với huệ, một nghiên cứu năm 1996 trên bốn giống đo được khoảng 0.13 phần trăm ở giống hoa đơn và khoảng 0.11 phần trăm ở giống hoa kép, và hoa hái tháng Mười cho nhiều concrete hơn hoa hái tháng Ba.

Với hoa hồng Damask ở Thổ Nhĩ Kỳ, hiệu suất concrete đã công bố cũng dưới một phần trăm khối lượng hoa. Từ concrete sang absolute lại mất thêm một phần: với hoa hồng, một nghiên cứu năm 2003 thu 58 đến 64 phần trăm absolute tính trên concrete.

Concrete yields are low and vary with cultivar, season and picking time. A study published in 2012 obtained 0.35% concrete from fresh jasmine grandiflorum flowers extracted with n-pentane. For tuberose, a 1996 study of four cultivars measured about 0.13% in single-flowered types and about 0.11% in double types, with October flowers yielding more than March flowers.

For Turkish Damask rose, published concrete yields are likewise well under one percent of flower weight. Going from concrete to absolute loses more: for rose, a 2003 study recovered 58 to 64% absolute from the concrete.

These figures come from specific studies, not industry standards. Factory yields may differ.

04Beurre d'iris không phải concrete/Orris butter is not a concrete

Trên thị trường, sản phẩm từ củ diên vĩ thường được gọi là "orris concrete" hoặc "beurre d'iris". Tên này đến từ hình dạng: sản phẩm đông lại thành khối sáp màu kem ở nhiệt độ phòng. Nhưng cách làm là chưng cất hơi nước củ đã phơi khô, không phải chiết dung môi. Chính ISO 9235:2021 lấy "iris butter" làm ví dụ cho tinh dầu chưng cất hơi nước.

Độ đặc đến từ acid béo, chủ yếu là acid myristic, bị cuốn theo hơi nước trong lúc chưng. Phần thơm chính là các irone, như alpha-irone. Vì vậy, khi đọc nhãn diên vĩ, chữ "concrete" chỉ mô tả dạng vật lý, không mô tả phương pháp.

In trade, the product from orris rhizomes is often called "orris concrete" or "beurre d'iris". The name comes from its look: it sets into a cream-coloured waxy mass at room temperature. Yet it is made by steam distilling the dried rhizomes, not by solvent extraction. ISO 9235:2021 itself uses "iris butter" as its example of a steam-distilled essential oil.

The texture comes from fatty acids, mostly myristic acid, carried over with the steam. The main odorants are irones such as alpha-irone. On an orris label, the word "concrete" describes the physical form, not the method.

05Đọc nhãn concrete/Reading a concrete label

Nhãn đầy đủ ghi tên loài bằng tiếng Latin, bộ phận cây, nước xuất xứ, và dung môi chiết. Nếu không ghi dung môi, có thể hỏi nhà cung cấp; hexane là câu trả lời thường gặp. Concrete thường được bán theo ký, ở dạng khối hoặc bột nhão, và cần làm ấm nhẹ để lấy ra.

Chữ "concrete" đi kèm hoa khô, rễ, nhựa hay rêu nên được đọc cẩn thận. Theo ISO 9235, extract từ nguyên liệu khô là resinoid, còn concrete chỉ dành cho nguyên liệu tươi. Tên thương mại không luôn theo đúng định nghĩa này. Các chất gây dị ứng cần khai báo trên nhãn mỹ phẩm ở EU được tính theo thành phần thực của concrete, giống như với tinh dầu.

A complete label gives the Latin species name, plant part, country of origin and extraction solvent. If the solvent is not stated, the supplier can be asked; hexane is the common answer. Concretes are usually sold by the kilogram as a block or paste and need gentle warming to dispense.

The word "concrete" attached to dried flowers, roots, resins or moss deserves a second look. Under ISO 9235 an extract of dry material is a resinoid; concrete is reserved for fresh material. Trade names do not always follow this. EU cosmetic allergen labelling is calculated from the concrete's actual composition, as with essential oils.
