Quế Ceylon và tinh dầu Sri Lanka

Sri Lanka

Sri Lanka là nguồn chính của quế thật, Cinnamomum verum (tên đồng nghĩa C. zeylanicum). Theo IFC, quế Ceylon chiếm khoảng 90 phần trăm thị trường quế thật thế giới và là nông sản xuất khẩu lớn thứ hai của Sri Lanka sau chè.

Quế được trồng dọc dải đồng bằng ven biển phía tây nam, từ Negombo đến Matara, và lan vào Kalutara, Ratnapura. Cùng vùng này trồng sả Ceylon, loài cho dầu citronella kiểu Sri Lanka.

Từ tháng 2 năm 2022, Ceylon Cinnamon là chỉ dẫn địa lý được bảo hộ (PGI) tại Liên minh châu Âu, sản phẩm đầu tiên của Sri Lanka có danh hiệu này. Nhãn PGI áp dụng cho quế ống, quế bột, dầu lá và dầu vỏ quế.

Sri Lanka is the main source of true cinnamon, Cinnamomum verum (synonym C. zeylanicum). According to IFC, Ceylon cinnamon holds about 90% of the world market for true cinnamon and is Sri Lanka's second agricultural export after tea.

Cinnamon is grown along the south western coastal plain from Negombo to Matara, extending into Kalutara and Ratnapura. The same belt grows Ceylon citronella, the source of Sri Lanka-type citronella oil.

Since February 2022 Ceylon Cinnamon has been a protected geographical indication (PGI) in the European Union, the first Sri Lankan product with this status. The PGI covers quills, powder, leaf oil and bark oil.

01Quế Ceylon/Ceylon cinnamon

Quế Ceylon là loài khác với quế cassia của Việt Nam và Trung Quốc. Cây được trồng thành bụi và đốn gốc để mọc chồi; lứa thu đầu tiên sau khoảng ba năm, sau đó thu hai lần mỗi năm. Cành được cắt khi vỏ ngả nâu và đường kính khoảng 3 đến 5 cm, rồi bóc vỏ ngay trong ngày.

Việc thu hoạch diễn ra sau hai đợt gió mùa, khi mưa làm vỏ mềm và dễ tách; mùa chính kéo dài khoảng tháng 6 đến tháng 12. Thợ bóc chà thân, rạch và lột lớp vỏ trong mỏng, rồi cuộn nhiều lớp lồng vào nhau thành ống quế (quill). Ống được phân hạng theo đường kính, từ Alba nhỏ nhất đến Continental, Mexican và Hamburg.

Tháng 1 năm 2024, 45 nông hộ và cơ sở chế biến đầu tiên được cấp chứng nhận chỉ dẫn địa lý. Ban Phát triển Xuất khẩu Sri Lanka (EDB) giữ quyền cấp phép dùng nhãn PGI cho thành viên của hiệp hội Ceylon Cinnamon PGI.

Quế Ceylon chứa rất ít coumarin so với quế cassia. Đây là một lý do quế Ceylon được ưa dùng trong thực phẩm ở châu Âu, nơi coumarin trong thực phẩm có giới hạn.

Ceylon cinnamon is a different species from the cassia of Vietnam and China. The plant is grown as a coppiced bush cut back to send up shoots; the first harvest comes after about three years, then two harvests a year. Shoots are cut when the bark turns brown and the stem is about 3 to 5 cm across, and are peeled the same day.

Harvesting follows the two monsoons, when rain softens the bark and it lifts easily; the main season runs roughly June to December. Peelers rub the stem, score it and lift the thin inner bark, then roll layers inside one another into quills. Quills are graded by diameter, from the finest Alba through Continental, Mexican and Hamburg.

In January 2024 the first 45 farmers and processors were certified under the geographical indication. Sri Lanka's Export Development Board (EDB) licenses use of the PGI mark to members of the Ceylon Cinnamon PGI association.

Ceylon cinnamon contains very little coumarin compared with cassia. This is one reason it is preferred for food in Europe, where coumarin in food is limited.

02Dầu lá và dầu vỏ quế/Cinnamon leaf and bark oils

Cây quế Ceylon cho hai loại dầu khác hẳn nhau. Dầu lá cất từ lá sau mỗi đợt đốn, thành phần chính là eugenol. ISO 3524:2003 cho dầu lá quế kiểu Sri Lanka quy định eugenol 70 đến 83 phần trăm, cinnamaldehyde chỉ 0,8 đến 1,5 phần trăm, cùng eugenyl acetate và benzyl benzoate. Mùi của dầu lá vì vậy gần đinh hương hơn là quế.

Dầu vỏ cất từ vỏ vụn và mảnh cắt còn lại sau khi cuộn ống. Thành phần chính là trans-cinnamaldehyde, thường hơn một nửa lượng dầu, cùng eugenol, linalool và cinnamyl acetate. Một nghiên cứu năm 2024 trên các giống quế Sri Lanka ghi nhận khoảng 78 phần trăm cinnamaldehyde cộng cinnamyl acetate ở giống Sri Gemunu, nhưng chỉ khoảng 63 phần trăm ở giống Sri Vijaya, giống có nhiều eugenol và benzyl benzoate hơn.

Dầu rễ quế giàu camphor và hầu như không được thương mại hóa.

Cinnamaldehyde và eugenol đều nằm trong danh sách chất gây dị ứng phải ghi nhãn của EU và có giới hạn IFRA.

The Ceylon cinnamon plant gives two very different oils. Leaf oil is distilled from leaves after each cutting, and its main constituent is eugenol. ISO 3524:2003 for Sri Lanka-type cinnamon leaf oil sets 70 to 83% eugenol and only 0.8 to 1.5% cinnamaldehyde, along with eugenyl acetate and benzyl benzoate. The leaf oil therefore smells closer to clove than to cinnamon.

Bark oil is distilled from chips and trimmings left after quill rolling. Its main constituent is trans-cinnamaldehyde, usually well over half the oil, with eugenol, linalool and cinnamyl acetate. A 2024 study of Sri Lankan cultivars found about 78% cinnamaldehyde plus cinnamyl acetate in Sri Gemunu, but only about 63% in Sri Vijaya, which carries more eugenol and benzyl benzoate.

Cinnamon root oil is rich in camphor and is hardly traded.

Cinnamaldehyde and eugenol are both on the EU list of labelled fragrance allergens and carry IFRA limits.

03Sả Ceylon/Ceylon citronella

Sả Ceylon (Cymbopogon nardus, dạng lenabatu) là loài bản địa được trồng ở vùng đất thấp nóng ẩm phía nam Sri Lanka. Dầu citronella kiểu Sri Lanka khác dầu kiểu Java (Cymbopogon winterianus) ở chỗ ít citronellal và geraniol hơn, nhiều monoterpene như camphene, limonene và nhiều methyl isoeugenol hơn. Mùi vì vậy gắt và gỗ hơn, kém hoa hơn.

Dầu kiểu Java giàu citronellal và geraniol nên được dùng để tách phân tử cho ngành hương. Dầu kiểu Sri Lanka chủ yếu dùng trực tiếp trong sản phẩm đuổi côn trùng, xà phòng và nến. Lá được cắt nhiều lứa mỗi năm.

Methyl isoeugenol là chất cần theo dõi theo IFRA; dầu citronella kiểu Sri Lanka và kiểu Java không nên ghi chung một tên trên nhãn.

Ceylon citronella (Cymbopogon nardus, lenabatu form) is a native grass grown in the hot, humid southern lowlands. Sri Lanka-type citronella oil differs from Java-type oil (Cymbopogon winterianus) by having less citronellal and geraniol and more monoterpenes such as camphene and limonene, plus more methyl isoeugenol. Its scent is therefore sharper and woodier, less floral.

Java-type oil, rich in citronellal and geraniol, is used to isolate molecules for the aroma industry. Sri Lanka-type oil is mainly used as it is, in insect repellents, soap and candles. Leaves are cut several times a year.

Methyl isoeugenol is a substance of note under IFRA; Sri Lanka and Java citronella oils should not share one name on a label.

The central hills around Matale and Kandy grow clove, nutmeg, black pepper and cardamom, often mixed in home gardens. Sri Lanka exports these spices mainly dried; oil distilled locally is small in volume compared with cinnamon.

These crops fall under the Department of Export Agriculture (DEA). Cinnamon has its own Department of Cinnamon Development, responsible for cultivars and post-harvest methods.
