Morocco

Maroc cung cấp cho ngành hương một nhóm nguyên liệu khá riêng: hồng Damask từ thung lũng Dadès, hoa cam đắng quanh Fès, tuyết tùng Atlas từ dãy Trung Atlas, và vài loài mọc hoang như chamomile Maroc và cúc xanh.

Nhiều nguyên liệu ở đây là cây mọc tự nhiên hoặc bán hoang, nên sản lượng thay đổi mạnh theo mưa, và việc khai thác cần được theo dõi. Tuyết tùng Atlas được IUCN xếp mức Nguy cấp từ năm 2013.

Argan, sản phẩm nổi tiếng nhất của Maroc, là dầu ép từ nhân hạt, không phải tinh dầu, nên không nằm trong trang này.

Morocco supplies perfumery with a distinctive set of materials: damask rose from the Dadès valley, bitter orange flower around Fès, Atlas cedarwood from the Middle Atlas, and several wild species such as Moroccan chamomile and blue tansy.

Many of these plants are wild or semi-wild, so output swings with rainfall and harvesting needs monitoring. Atlas cedar has been listed by IUCN as Endangered since 2013.

Argan, Morocco's best known plant product, is a pressed kernel oil rather than an essential oil, and is not covered here.

01Hồng thung lũng Dadès/Rose of the Dadès valley

Hồng ở đây là Rosa damascena, trồng thành hàng rào quanh các thửa ruộng nhỏ trong thung lũng Dadès và M'Goun, phía nam dãy Cao Atlas. Vùng thuộc tỉnh Tinghir, gồm các xã Kelâat M'Gouna, Boumalne Dadès, Aït Sedrate Sahel Gharbia, Aït Sedrate Sahel Charkia, Aït Ouassif, Souk Lakhmis và Ighil N'Oumgoun.

Năm 2011, Maroc công nhận nhãn xuất xứ được bảo hộ (AOP) Rose de Kelâat M'Gouna-Dadès. Theo Văn phòng Phát triển Nông nghiệp vùng Ouarzazate, tỉnh có 1.020 hecta hồng. Vụ 2024 đến 2025 dự kiến thu hơn 4.800 tấn hoa, so với 3.500 tấn vụ trước; khoảng 60 tấn được xuất khẩu.

The rose here is Rosa damascena, planted as hedges around small plots in the Dadès and M'Goun valleys south of the High Atlas. The area lies in Tinghir province and covers the communes of Kelâat M'Gouna, Boumalne Dadès, Aït Sedrate Sahel Gharbia, Aït Sedrate Sahel Charkia, Aït Ouassif, Souk Lakhmis and Ighil N'Oumgoun.

In 2011 Morocco recognised the protected designation of origin (AOP) Rose de Kelâat M'Gouna-Dadès. According to the Ouarzazate regional agricultural development office, the province has 1,020 hectares of roses. The 2024 to 2025 season was expected to yield over 4,800 tonnes of flowers, against 3,500 tonnes the year before; about 60 tonnes are exported.

The flowers open in April to May and are picked in the morning. Most are dried or distilled into rose water; a share is extracted into concrete and absolute. The rose fair at Kelâat M'Gouna is held every May; its 60th edition ran from 5 to 8 May 2025.

Rose water and products sold as Moroccan rose on the domestic market are often blended with synthetic fragrance; trade groups in Kelâat M'Gouna have raised the problem of counterfeits and unfair competition.

02Hoa cam đắng/Bitter orange flower

Maroc, Tunisia và Ai Cập là ba nguồn chính của hoa cam đắng (Citrus aurantium). Ở Maroc, vùng trồng quanh Fès và Khemisset, để cất hoa và lá. Hoa nở và được hái bằng tay từ cuối tháng 3 đến đầu tháng 5.

Morocco, Tunisia and Egypt are the three main sources of bitter orange flower (Citrus aurantium). In Morocco it is grown around Fès and Khemisset, for flower and leaf distillation. The flowers open and are hand-picked from late March to early May.

They are distilled into neroli and orange flower water, or solvent-extracted into orange flower absolute. Leaves and young twigs of the same tree give petitgrain bigarade. Orange flower water is a common ingredient in Moroccan pastry and cooking.

03Tuyết tùng Atlas/Atlas cedar

Tuyết tùng Atlas (Cedrus atlantica) là tuyết tùng thật thuộc chi Cedrus, mọc ở dãy Trung Atlas và Rif của Maroc và ở Algeria. IUCN chuyển loài này từ mức Ít quan ngại (1998) lên Nguy cấp năm 2013, do khai thác, chăn thả quá mức và cây chết hàng loạt khi hạn hán kéo dài.

Dầu tuyết tùng Atlas được cất chủ yếu từ mùn cưa và phế liệu gỗ của ngành khai thác gỗ, không từ cây chặt riêng để cất dầu. Thành phần chính là các himachalene: một nghiên cứu trên mùn cưa Maroc ghi nhận beta-himachalene 24 đến 44 phần trăm và alpha-himachalene đến khoảng 17 phần trăm tùy phương pháp chiết. Mùi gỗ khô, hơi ngọt, khác dầu tuyết tùng Virginia hay Trung Quốc vốn giàu cedrol và thujopsene.

Vì dầu đến từ phế liệu gỗ, nguồn gốc hợp pháp của gỗ quyết định tính bền vững của dầu.

Atlas cedar (Cedrus atlantica) is a true cedar of the genus Cedrus, native to the Middle Atlas and Rif of Morocco and to Algeria. IUCN moved it from Least Concern (1998) to Endangered in 2013, because of logging, overgrazing and dieback during prolonged drought.

Atlas cedarwood oil is distilled mainly from sawdust and wood waste from the timber trade rather than from trees felled for oil. Its main constituents are the himachalenes: a study of Moroccan sawdust found beta-himachalene at 24 to 44% and alpha-himachalene up to about 17%, depending on extraction method. The scent is dry, slightly sweet wood, unlike Virginian or Chinese cedarwood oils, which are rich in cedrol and thujopsene.

Since the oil comes from wood waste, the legal origin of the timber determines how sustainable the oil is.

04Chamomile Maroc và cúc xanh/Moroccan chamomile and blue tansy

Chamomile Maroc (Cladanthus mixtus, tên cũ Ormenis mixta hoặc Ormenis multicaulis) là cây hoang dại mọc ở vùng đất cát ven biển Đại Tây Dương. Dù mang tên chamomile, nó không cùng chi với chamomile Đức hay chamomile La Mã, và dầu không có chamazulene. Thành phần thay đổi rất mạnh theo nơi hái: mẫu ở Salé có santolina alcohol 45 đến 55 phần trăm; mẫu ở Kénitra 24 đến 48 phần trăm; một số mẫu khác lại giàu ester hemiterpene như isobutyl angelate.

Cúc xanh (Tanacetum annuum) là cây hàng năm vùng Địa Trung Hải. Dầu có màu xanh đậm do chamazulene, sinh ra từ tiền chất trong lúc cất. Nhu cầu trong mỹ phẩm đã tăng; khi mua nên hỏi lô dầu từ cây hoang hay cây trồng, vì chất lượng giữa các lô khác nhau.

Hai tên gọi dễ gây nhầm: "blue tansy" đôi khi bị bán dưới tên "Moroccan chamomile". Cần kiểm tra tên Latin.

Moroccan chamomile (Cladanthus mixtus, formerly Ormenis mixta or Ormenis multicaulis) is a wild plant of sandy Atlantic coastal soils. Despite its name it is not in the same genus as German or Roman chamomile, and its oil contains no chamazulene. Composition varies greatly with collection site: Salé samples held 45 to 55% santolina alcohol, Kénitra samples 24 to 48%; other samples are instead rich in hemiterpene esters such as isobutyl angelate.

Blue tansy (Tanacetum annuum) is a Mediterranean annual. Its oil is deep blue from chamazulene, formed from a precursor during distillation. Demand from cosmetics has grown; buyers should ask whether a lot is wild-harvested or cultivated, since lot quality varies.

The two names are easily confused: blue tansy is sometimes sold as Moroccan chamomile. Check the Latin name.

05Cistus và labdanum/Cistus and labdanum

Cistus ladanifer grows wild around Oulmès and in the hills of northern Morocco. Spain is the main producer of both cistus oil and labdanum; Morocco produces smaller amounts. Leaf oil yield in Morocco has been reported at about 0.14%, lower than samples from the northern Mediterranean.

Cistus oil is distilled from leafy twigs; labdanum is the gum resin obtained by boiling twigs in alkaline water, then processed into a resinoid or absolute. The two smell different and should be labelled separately.
