Pomade và enfleurage: khi mỡ được dùng để giữ mùi hoa

Pomade and enfleurage

Trước khi có dung môi bay hơi, mỡ là cách chính để giữ mùi của những hoa không chịu được nồi chưng cất. Chất béo hút các phân tử thơm, và giữ chúng lâu. Sản phẩm của cách làm này là pomade: một khối mỡ đã bão hòa mùi hoa.

Enfleurage có hai kiểu. Kiểu lạnh đặt hoa lên lớp mỡ ở nhiệt độ phòng. Kiểu nóng, còn gọi là digestion hay macération, ngâm hoa trong mỡ đã nấu chảy. Cả hai đều cho pomade, và pomade có thể được rửa bằng cồn để lấy phần thơm ra. Ngày nay cách làm này gần như chỉ còn trong bảo tàng, lớp học và vài xưởng nhỏ.

ISO 9235:2021 định nghĩa pomade là chất béo đã mang mùi, lấy từ hoa bằng enfleurage lạnh (mùi của hoa khuếch tán vào mỡ) hoặc enfleurage nóng (ngâm hoặc hầm hoa trong mỡ đã nấu chảy).

Before volatile solvents, fat was the main way to hold the scent of flowers that could not survive a still. Fat absorbs aroma molecules and keeps them. The product is a pomade: a mass of fat saturated with flower scent.

Enfleurage came in two kinds. Cold enfleurage laid flowers on fat at room temperature. Hot enfleurage, also called digestion or maceration, steeped flowers in melted fat. Both gave a pomade, and a pomade could be washed with alcohol to draw the scent out. Today the method survives mainly in museums, classes and a few small workshops.

ISO 9235:2021 defines a pomade as a perfumed fat obtained from a flower either by cold enfleurage, where the scent diffuses into the fat, or by hot enfleurage, where the flower is digested or immersed in melted fat.

01Enfleurage lạnh: khung kính và mỡ/Cold enfleurage: glass frames and fat

Dụng cụ chính là chassis: một tấm kính đặt trong khung gỗ. Hai mặt kính được phết một lớp mỡ mỏng, đã tinh chế để không còn mùi riêng. Hoa được rải lên mỡ, các khung được chồng lên nhau để hoa nằm kín giữa hai lớp mỡ.

Sau khoảng một ngày, hoa cũ được gỡ ra và hoa mới được rải lên. Việc thay hoa lặp lại nhiều tuần cho đến khi mỡ đủ đậm mùi. Cách này hợp với hoa như nhài và huệ, vốn tiếp tục tỏa mùi sau khi hái, nên mỡ hút được mùi mà không cần nhiệt.

Theo phiếu tư liệu của thành phố Grasse, enfleurage lạnh xuất hiện ở đây vào khoảng năm 1750, cho các hoa dễ hỏng như hoa cam, nhài và huệ.

The key tool was the chassis: a glass pane set in a wooden frame. Both faces of the glass were spread with a thin layer of fat, purified so it had no smell of its own. Flowers were strewn on the fat and frames were stacked so each layer of flowers sat enclosed between two layers of fat.

After about a day the spent flowers were removed and fresh ones laid down. The recharging went on for weeks until the fat was strongly scented. The method suited jasmine and tuberose, which keep releasing scent after picking, so the fat could take it up without heat.

According to the City of Grasse heritage sheet, cold enfleurage appeared there around 1750 for delicate flowers such as orange blossom, jasmine and tuberose.

02Enfleurage nóng: hầm hoa trong mỡ/Hot enfleurage: digesting flowers in fat

Với enfleurage nóng, hoa được thả vào mỡ đã nấu chảy, khuấy và giữ ấm một thời gian, rồi vớt ra và thay mẻ mới. Nhiệt làm mùi đi vào mỡ nhanh hơn, nhưng cũng làm đổi mùi với những hoa nhạy nhiệt.

In hot enfleurage, flowers were dropped into melted fat, stirred and held warm for a time, then strained out and replaced with a new batch. Heat moved the scent into the fat faster but could also alter heat-sensitive flowers.

A historical study of the Chiris firm notes that Grasse perfumery in the 17th and 18th centuries used maceration, infusion, distillation and extraction with fat or olive oil, both cold and hot. The same study records that between about 1868 and 1872 Chiris brought steam distillation, rectification and hot enfleurage into its new Grasse factory.

03Từ pomade đến extrait và absolute/From pomade to extrait and absolute

Pomade có thể được dùng trực tiếp trong sản phẩm chứa mỡ. Để làm nước hoa, pomade được khuấy nhiều lần với cồn. Cồn kéo phần thơm ra, mỡ gần như không tan. Dung dịch cồn này được gọi là extrait de pomade. Khi làm lạnh, lọc bỏ phần mỡ còn sót và cất cồn dưới chân không, sản phẩm là absolute từ pomade.

ISO 9235 tính pomade là một trong bốn nguồn hợp lệ của absolute, cùng với concrete, resinoid và extract CO2. Tên "absolue de chassis" cũng xuất hiện trong tài liệu cũ, nhưng các nguồn không thống nhất về việc nó chỉ absolute từ pomade hay từ hoa đã gỡ khỏi khung.

A pomade could be used directly in fatty products. For perfume, it was stirred repeatedly with alcohol. The alcohol drew out the scent while the fat stayed largely undissolved. This alcoholic solution was called extrait de pomade. After chilling, filtering off remaining fat and removing the alcohol under vacuum, the result is a pomade absolute.

ISO 9235 lists the pomade as one of four valid sources of an absolute, alongside the concrete, the resinoid and the CO2 extract. The name "absolue de chassis" also appears in older literature, but sources disagree on whether it meant the pomade absolute or an extract of the spent flowers taken off the frames.

04Vì sao chiết dung môi thay thế/Why solvent extraction took over

Enfleurage cần nhiều người, nhiều tuần và nhiều mỡ cho một lượng mùi nhỏ. Chiết dung môi bay hơi làm cùng việc trong vài giờ. Ở Grasse, hãng Chiris xây nhà xưởng chiết dung môi năm 1898; tòa nhà rộng 4.582 mét vuông khánh thành năm 1899, được đặt biệt danh "la Mosquée". Enfleurage took many hands, many weeks and much fat for a small amount of scent. Volatile solvent extraction did the same job in hours. In Grasse, the Chiris firm built a solvent extraction hall in 1898; the 4,582 square metre building opened in 1899 and was nicknamed "la Mosquée". The French heritage record notes that distillation and enfleurage continued in the older parts of the factory afterwards.

The concrete gradually replaced the pomade during the 20th century. In 1967 Chiris was sold to Universal Oil Products, one marker of the period when Grasse raw material houses were absorbed into larger groups. The Absolue Pays de Grasse geographical indication, approved by INPI in 2020, still accepts enfleurage alongside volatile solvents and supercritical CO2. See also Grasse.

Year-by-year figures for the share of jasmine processed by enfleurage circulate online but could not be traced to a primary source, so they are left out.
