Lemon, grapefruit, lavender-like floral, resin, light wood. Fresh and buzzing, with a numbing effect on the tongue in the total extract. Unlike black pepper: no heat, more citrus and floral.
Hoa tiêu CO2 extract không có tiêu chuẩn riêng trong danh mục IFRA 51. Linalool và limonene có mặt, là chất phải ghi nhãn dị ứng tại EU trên ngưỡng.
Loại total chứa hydroxy-α-sanshool, chất gây cảm giác tê và rung, có thể gây cảm giác trên da ở nồng độ cao. Bảo quản chai tối, kín, mát.
Sichuan pepper CO2 extract has no dedicated standard in the IFRA 51 index. Linalool and limonene are present and are EU-labelled allergens above threshold.
The total extract contains hydroxy-α-sanshool, which causes a tingling, numbing sensation and can be felt on skin at high concentration. Store dark, sealed and cool.

Hoa tiêu Tứ Xuyên là vỏ quả khô của các loài Zanthoxylum, họ Cam. Hạt đen bên trong thường bỏ đi, chỉ dùng vỏ. Tứ Xuyên, đặc biệt huyện Hán Nguyên, nổi tiếng với loại vỏ đỏ. Ở Việt Nam, mắc khén của vùng Tây Bắc thuộc cùng chi; loài thường được ghi là Zanthoxylum rhetsa, nhưng danh tính loài còn tranh luận.
Cảm giác tê và rung trên lưỡi do hydroxy-α-sanshool, một amide kích hoạt các thụ thể cảm giác. Chất này không bay hơi và không đóng góp mùi.
Chiết bằng CO2 dùng carbon dioxide nén làm dung môi. Ở điều kiện dưới tới hạn, CO2 lấy chủ yếu phần bay hơi, cho sản phẩm gọi là select. Ở điều kiện siêu tới hạn, CO2 lấy thêm chất béo và chất không bay hơi, cho sản phẩm gọi là total. Khi giảm áp, CO2 bay hơi hết, không để lại dư lượng dung môi.
Phần bay hơi giàu linalool và limonene, nên mùi thiên về cam chanh và hoa hơn là tiêu. Tỉ lệ thay đổi theo loài: hoa tiêu đỏ ấm và gỗ hơn, hoa tiêu xanh (Z. armatum, Z. schinifolium) tươi và giống chanh hơn.
Trong perfumery, hoa tiêu CO2 dùng cho nốt đầu cam chanh gia vị trong hương gỗ, hương hoa và hương trà. Nó phối với bưởi, yuzu, gừng, hoa oải hương và gỗ tuyết tùng.
Loại select dễ dùng hơn trong nước hoa vì ít chất gây tê. Loại total dùng nhiều trong thực phẩm.
Sichuan pepper is the dried fruit husk of Zanthoxylum species, in the citrus family. The black seeds inside are usually discarded; only the husk is used. Sichuan, especially Hanyuan county, is known for the red type. In Vietnam, mắc khén of the northwest belongs to the same genus; it is usually given as Zanthoxylum rhetsa, but its species identity is debated.
The numbing, tingling sensation comes from hydroxy-α-sanshool, an amide that activates sensory receptors. It is non-volatile and contributes no odour.
CO2 extraction uses compressed carbon dioxide as the solvent. Under subcritical conditions CO2 takes mainly the volatile fraction, giving a product called a select extract. Under supercritical conditions it also takes lipids and non-volatiles, giving a total extract. On depressurisation the CO2 evaporates completely and leaves no solvent residue.
The volatile fraction is rich in linalool and limonene, so the odour leans to citrus and flowers more than pepper. Ratios vary by species: red huajiao is warmer and woodier, green types (Z. armatum, Z. schinifolium) fresher and more lemony.
In perfumery Sichuan pepper CO2 serves citrus-spicy tops in woody, floral and tea accords. It pairs with grapefruit, yuzu, ginger, lavender and cedarwood.
The select extract is easier to use in perfume because it carries little of the numbing compound. The total extract is widely used in food.
