Gừng tươi vừa cắt, chanh, cay nóng, hơi đất và gỗ. Loại total có vị cay rõ khi nếm và mùi ấm, tròn hơn tinh dầu; loại select sáng và giống gừng tươi hơn.

Freshly cut ginger, lemon, hot spice, a little earth and wood. The total extract carries the pungency and a warmer, rounder odour than the oil; the select extract is brighter and closer to fresh ginger.


Cảnh báo an toàn / Safety

Gừng CO2 extract không có tiêu chuẩn riêng trong danh mục IFRA 51. Citral, nếu có từ gừng tươi, chịu hạn chế IFRA (2020) và phải ghi nhãn dị ứng tại EU trên ngưỡng.

Loại total chứa gingerol, chất tạo vị cay, có thể gây cảm giác nóng trên da ở nồng độ cao. Bảo quản chai tối, kín, mát.

Ginger CO2 extract has no dedicated standard in the IFRA 51 index. Citral, when present from fresh-type ginger, is IFRA-restricted (2020) and an EU-labelled allergen above threshold.

The total extract contains gingerols, the pungent principles, which can feel hot on skin at high concentration. Store dark, sealed and cool.

Gừng là thân rễ của Zingiber officinale, cây thảo nhiệt đới có nguồn gốc Nam và Đông Nam Á. Ấn Độ và Trung Quốc là hai nước sản xuất lớn nhất; Nigeria là nhà xuất khẩu gừng khô quan trọng. Việt Nam trồng gừng ở nhiều tỉnh cho thị trường nội địa và xuất khẩu.

Chiết bằng CO2 dùng carbon dioxide nén làm dung môi. Ở điều kiện dưới tới hạn, CO2 lấy chủ yếu phần bay hơi, cho sản phẩm gọi là select. Ở điều kiện siêu tới hạn, CO2 lấy thêm chất béo và chất không bay hơi, cho sản phẩm gọi là total. Khi giảm áp, CO2 bay hơi hết, không để lại dư lượng dung môi.

Tinh dầu gừng chưng cất chỉ chứa phần bay hơi. Gingerol và shogaol, các chất tạo vị cay, gần như không bay hơi nên nằm lại trong bã. CO2 total giữ được các chất này, vì vậy nó được dùng cả trong hương liệu thực phẩm để tạo vị cay.

Mùi gừng thay đổi theo nguồn: gừng Ấn Độ và châu Phi thường đất và ấm hơn, gừng tươi Úc và Trung Quốc giàu citral và chanh hơn. Gừng khô và gừng tươi cũng cho mùi khác nhau.

Trong perfumery, gừng CO2 extract dùng cho nốt đầu cay, cologne, hương gỗ và gourmand. Nó phối tốt với cam chanh, hoa cam, gỗ tuyết tùng và vetiver. Loại select dễ dùng hơn trong nước hoa vì ít chất béo.

Ginger is the rhizome of Zingiber officinale, a tropical herb from South and Southeast Asia. India and China are the largest producers; Nigeria is an important exporter of dried ginger. Vietnam grows ginger in many provinces for domestic and export markets.

CO2 extraction uses compressed carbon dioxide as the solvent. Under subcritical conditions CO2 takes mainly the volatile fraction, giving a product called a select extract. Under supercritical conditions it also takes lipids and non-volatiles, giving a total extract. On depressurisation the CO2 evaporates completely and leaves no solvent residue.

Distilled ginger oil contains only the volatile fraction. Gingerols and shogaols, the pungent compounds, are practically non-volatile and stay in the residue. A total CO2 extract keeps them, which is why it is also used in food flavours for heat.

Ginger odour varies by source: Indian and African ginger tends to be earthier and warmer, fresh Australian and Chinese ginger richer in citral and lemon. Dried and fresh ginger also smell different.

In perfumery ginger CO2 extract serves spicy tops, colognes, woody and gourmand accords. It pairs with citrus, orange flower, cedarwood and vetiver. The select extract is easier to use in fine fragrance because it carries less fat.
