Cà phê vừa xay, rang đậm, khói nhẹ, caramel, hơi đất. CO2 extract giữ nốt đầu tươi của hạt mới xay, gần với cà phê thật hơn absolute.

Freshly ground coffee, dark roast, light smoke, caramel, a little earth. The CO2 extract keeps the fresh top of newly ground beans and is closer to real coffee than the absolute.

Chiết xuất cà phê không có tiêu chuẩn riêng trong danh mục IFRA 51. Một số thành tố như guaiacol có mặt ở lượng nhỏ; furfural, nếu có, chịu hạn chế IFRA.

CO2 extract từ hạt rang chứa dầu cà phê và caffeine. Bảo quản chai tối, kín, mát; nốt rang dễ oxi hóa và mất độ tươi.

Coffee extracts have no dedicated standard in the IFRA 51 index. Constituents such as guaiacol occur in small amounts; furfural, if present, is IFRA-restricted.

CO2 extracts of roasted beans contain coffee oil and caffeine. Store dark, sealed and cool; roast notes oxidise and lose freshness.

Mùi cà phê rang gồm hàng trăm hợp chất, nhưng chỉ vài chục chất đóng vai trò chính. 2-Furfurylthiol được xem là chất tạo mùi then chốt của cà phê rang; guaiacol và 4-vinylguaiacol cho nốt khói và gia vị; pyrazine cho nốt rang và hạt.

Chiết bằng CO2 dùng carbon dioxide ở áp suất cao làm dung môi. Khi giảm áp, CO2 bay hơi hoàn toàn, không để lại dư lượng dung môi. Phương pháp này hoạt động ở nhiệt độ thấp nên giữ được nhiều chất dễ bay hơi hơn so với chưng cất.

CO2 siêu tới hạn cũng là công nghệ khử caffeine cho cà phê nhân, được phát triển ở Đức vào thập niên 1970. Trong trường hợp đó caffeine là sản phẩm tách ra; trong CO2 extract dùng cho hương, caffeine thường có mặt cùng hương.

Việt Nam là nước sản xuất cà phê lớn thứ hai thế giới, chủ yếu là Robusta (Coffea canephora) ở Tây Nguyên. Arabica trồng ở vùng cao như Lâm Đồng và Sơn La. Hai loài cho CO2 extract khác nhau: Robusta đắng và đất hơn, Arabica chua và hoa hơn.

Trong perfumery, cà phê CO2 extract dùng cho hương gourmand và oriental. Nó thường đi cùng vanilla, bạch đậu khấu, hoắc hương và hoa cam. Nốt rang phai nhanh hơn nền, nên thường cần phân tử tổng hợp bổ trợ nếu muốn nốt cà phê kéo dài.

Cà phê rang càng đậm, nốt khói và đắng trong CO2 extract càng rõ; rang nhạt giữ nhiều nốt trái cây và hoa hơn.

Roasted coffee aroma involves hundreds of compounds, but only a few dozen are key. 2-Furfurylthiol is regarded as a key odorant of roasted coffee; guaiacol and 4-vinylguaiacol add smoky and spicy notes; pyrazines add roasted, nutty notes.

CO2 extraction uses carbon dioxide under pressure as the solvent. On depressurisation the CO2 evaporates completely and leaves no solvent residue. The process runs at low temperature, so it keeps more volatile compounds than distillation.

Supercritical CO2 is also the technology used to decaffeinate green coffee, developed in Germany in the 1970s. There caffeine is the product removed; in a CO2 extract for fragrance, caffeine is usually present with the aroma.

Vietnam is the world's second-largest coffee producer, mainly Robusta (Coffea canephora) in the Central Highlands. Arabica grows at altitude in Lâm Đồng and Sơn La. The two species give different CO2 extracts: Robusta is more bitter and earthy, Arabica more acidic and floral.

In perfumery coffee CO2 extract serves gourmand and oriental fragrances. It is usually paired with vanilla, cardamom, patchouli and orange flower. Roast notes fade faster than the base, so synthetic support is common when a lasting coffee note is wanted.

The darker the roast, the more smoke and bitterness in the CO2 extract; a light roast keeps more fruit and floral notes.
