Pandanus amaryllifolius là cây bụi thân thảo nhiệt đới, lá dài, xanh bóng. Ở Việt Nam cây được gọi là lá dứa. Lá được dùng để tạo màu xanh và mùi thơm cho xôi, bánh, chè và nước uống khắp Đông Nam Á. Cây nhân giống bằng chồi và cho lá quanh năm.
Chất tạo mùi chính của lá dứa là 2-acetyl-1-pyrroline. Đây cũng là chất tạo mùi thơm của gạo thơm như gạo jasmine, và có trong vỏ bánh mì nướng. Chất này có ngưỡng mùi rất thấp nhưng kém bền.
Các nghiên cứu đã thử chiết lá dứa bằng CO2 siêu tới hạn. Kết quả cho thấy chiết CO2 thu được 2-acetyl-1-pyrroline với hiệu quả cao hơn chiết dung môi thông thường ở điều kiện nghiên cứu. Trong chiết xuất, 3-methyl-2(5H)-furanone là một thành phần chiếm tỷ lệ lớn.
Chiết xuất lá dứa chủ yếu được dùng trong ngành hương liệu thực phẩm. Nguồn chiết CO2 cho perfumery ở quy mô thương mại chưa được xác nhận.
Trong perfumery, nốt lá dứa cho cảm giác cơm, lá xanh và ngọt nhẹ. Nó hợp với gourmand châu Á, hương trà và các cấu trúc lá xanh. Cần phân biệt với kewda, chiết từ hoa đực của Pandanus odorifer, có mùi hoa và mùi khác hẳn.
Pandanus amaryllifolius is a tropical herbaceous shrub with long, glossy green leaves. In Vietnam it is called lá dứa. Across South-East Asia the leaves colour and scent sticky rice, cakes, sweet soups and drinks. The plant is propagated from shoots and yields leaves year-round.
The main odorant of pandan leaf is 2-acetyl-1-pyrroline. It is also the aroma compound of fragrant rice such as jasmine rice and occurs in toasted bread crust. It has a very low odour threshold but is unstable.
Studies have tested supercritical CO2 extraction of pandan leaves. Under the study conditions, CO2 extraction recovered 2-acetyl-1-pyrroline more effectively than conventional solvent extraction. 3-Methyl-2(5H)-furanone was a major component of the extract.
Pandan extracts are used mainly in the food flavour industry. A commercial CO2 extract for perfumery has not been confirmed.
In perfumery, a pandan note gives a cooked rice, green leaf and lightly sweet impression. It suits Asian gourmand, tea and green leaf structures. It should be distinguished from kewda, extracted from the male flowers of Pandanus odorifer, which smells floral and quite different.
