Brassica nigra là loài cây mù tạt đen, hạt dùng làm gia vị nổi tiếng trong ẩm thực châu Âu và Ấn Độ.
Allyl isothiocyanate được giải phóng khi hạt nghiền bị xúc tác bởi enzyme myrosinase (cũng có trong hạt). Hạt mù tạt trắng (Sinapis alba) không cho ra allyl isothiocyanate trong điều kiện này.
Dầu cố định từ hạt cũng được gọi là 'mustard oil', khác hẳn với tinh dầu chưng cất.

Brassica nigra is black mustard, its seeds being a famous spice in European and Indian cuisines.
Allyl isothiocyanate is released when crushed seeds are catalyzed by myrosinase (an enzyme also present in the seeds). White mustard seeds (Sinapis alba) do not produce allyl isothiocyanate under these conditions.
Fixed oil from the seeds is also called 'mustard oil', markedly different from the distilled essential oil.
