Rang đậm, caramel đắng, bánh mì cháy cạnh. Nét cà phê không có vị chua. Đáy gỗ khô và đường thắng.

Deep roast, bitter caramel, darkened bread crust. Coffee-like without acidity. A base of dry wood and burnt sugar.

Cichorium intybus là cây thân thảo lâu năm họ Cúc, hoa xanh lam, mọc khắp châu Âu. Giống trồng lấy rễ có rễ cái to. Rễ được thu vào mùa thu, cắt lát, sấy rồi rang.

Rễ rau diếp xoăn tươi giàu inulin, một polysaccharide của fructose. Rễ này cũng là nguồn công nghiệp chính để sản xuất inulin. Khi rang, inulin và đường bị phân giải, tạo ra các sản phẩm của phản ứng Maillard và caramel hóa. Các chất này cho mùi rang và vị đắng ngọt.

Rễ rang được dùng làm đồ uống thay cà phê hoặc pha trộn với cà phê, đặc biệt ở miền bắc nước Pháp và Bỉ. Việc này phổ biến ở châu Âu từ thế kỷ 19.

Absolute và tincture được làm bằng chiết rễ rang với dung môi. Sản phẩm sẫm màu, đặc. Số liệu thành phần công bố riêng cho absolute ít, nên trang này chỉ nêu các nhóm chất.

Cùng loài Cichorium intybus còn cho rau witloof, tức endive Bỉ. Rễ được trồng lại trong bóng tối để mọc búp lá trắng. Giống lấy rễ để rang là một dạng trồng khác của cùng loài.

Trong perfumery, rau diếp xoăn rang absolute cho nét rang không có độ chua của cà phê. Nó dùng trong gourmand, hương thuốc lá và da thuộc, nối tốt với cacao, vani và tonka.

Cichorium intybus is a perennial of the daisy family with sky-blue flowers, common throughout Europe. Root varieties have a large taproot. Roots are lifted in autumn, sliced, dried and roasted.

Fresh chicory root is rich in inulin, a fructose polysaccharide. The root is also the main industrial source of inulin. On roasting, inulin and sugars break down into Maillard and caramelisation products. These give the roasted odour and bittersweet taste.

The roasted root is used as a coffee substitute or blended with coffee, especially in northern France and Belgium. The practice has been common in Europe since the 19th century.

The absolute and tincture are made by solvent extraction of the roasted root. The product is dark and thick. Published composition data for the absolute are scarce, so this page names only compound classes.

The same species also gives witloof, or Belgian endive. Roots are replanted in darkness to force pale leaf buds. Root chicory for roasting is another cultivated form of the same species.

In perfumery, roasted chicory absolute gives a roasted note without coffee's acidity. It is used in gourmand, tobacco and leather accords and links well with cacao, vanilla and tonka.
