History

Safranal is the main odorant of saffron (Crocus sativus). It forms when picrocrocin in the stigmas breaks down during drying and storage.

In perfumery

Safranal is used in saffron and leather accords, often with oud and rose in modern oriental compositions, within IFRA limits.
