Rich vanilla, creamy and candied; roughly three times stronger than vanillin.

History

Ethyl vanillin is a synthetic homologue of vanillin and is absent from vanilla pods. It is made from catechol via guaethol. Guerlain's Shalimar (1925) is often associated with a heavy dose of ethyl vanillin.

In perfumery

Used in vanilla, amber and gourmand fragrances and widely in food. It can turn products brown.
