Dimethyl disulfide

Dimethyl disulfide occurs at very low levels in garlic oil. The main concern is inhalation toxicity.

Inhalation. Vapor exposure at 250 ppm for 6 hours daily over 13 days caused lethargy, breathing difficulty, weight loss and organ congestion in rats. At 100 ppm for 20 days there were no toxic signs. A 90-day study at 0, 5, 25 or 125 ppm established an inhalation NOAEL of 5 ppm for male rats and 25 ppm for females.

Dimethyl disulfide is a natural metabolite of sulfur-containing amino acids, found in many vegetables of the allium and brassica families.
