History

beta-damascenone was identified in Bulgarian rose oil by Demole and colleagues at Firmenich, published in 1970. Though present in tiny amounts, it contributes strongly to rose odour. It forms from carotenoid breakdown and occurs in wine, bourbon, apple and tobacco.


In perfumery

Used at parts-per-million levels in rose, dried fruit and tobacco accords.
