History

The name "aldehyde C-14" is a long-standing misnomer. The molecule is a lactone with no aldehyde group and only 11 carbons. The number 14 does not reflect the carbon count; its exact origin is not clearly documented.

gamma-undecalactone is usually cited as the peach note of Guerlain's Mitsouko (1919).

In perfumery

The basis of peach and apricot accords; softens white florals and chypres. Occurs naturally in small amounts in peach and apricot.
