History

The names "aldehyde C-16" and "strawberry aldehyde" are both chemically wrong: the molecule is an ester with an epoxide ring, has no aldehyde group and has 12 carbons. It is prepared by the Darzens condensation of acetophenone with ethyl chloroacetate.

In perfumery

Used for strawberry and red fruit accords in perfume, soap and flavours.
