History

Ethyl maltol is a synthetic homologue of maltol and several times stronger. It has not been reported in nature. Thierry Mugler's Angel (1992) is often cited as the perfume that brought its cotton candy note into the gourmand genre.

In perfumery

A core gourmand material; also widely used in food. It can discolour in contact with iron ions.
